Pinterest Fail

so it seems we've all been "pinning" quite a bit, but are you trying your pins?   (if you have no idea what that all means click here and feel free to become addicted ;) i saw this recipe for coconut milk "whipped cream" early on, and i've been dying to give it a try.  i had the coconut milk in the pantry for a recipe that never happened.  i was really looking forward to the promised whipped cream alternative.

"how could such a miraculous promise possibly be a fail?" you may be thinking.  well, based on flavor it was good.  smell.  another issue all together.  it's probably just my own weird thing which is why i'm gonna go ahead and post the recipe.  you may love coconut milk.  you may use it all the time.  if so, try this...it tastes good.  the smell, for whatever reason, made me so grossed out i could hardly breath in the kitchen for the rest of the day.  sorry.  it's just true.

well, nonetheless, here's the recipe.  anyone else have the same problem with coconut milk????

pop the can of full fat coconut milk in the refrigerator for quite some time or overnight.

scoop out the firm top layer leaving the coconut water in the can.

scoop it into a bowl.  there isn't a ton.

add a capful of vanilla and a sprinkle of cinnamon.

about like that.

add a generous dash of sugar and whisk it all together until it looks creamy.

now doesn't that look lovely?!  i was really hoping i could make it past the smell because it did taste okay and is a tad (understatement) healthier than whipped cream.  well, after i gagged down a bite or two i tried to pawn it off on the kids.  they took a few bites and said..."this is gross."

we were able to salvage the berries.  chalk it up to one failed experiment.

I tried Skinny Tzatziki yesterday.. it was my first Pinterest FAIL also!!! :( Talk about gross! lol

try Mimicream, made from nuts. Having a dairy allergy I love refrigerated coconut milk, but the canned stuff.... uck. I can't stand the smell! (It tastes a bit greasy too.) Anyways, we special ordered mimic cream to the King Supers on Timberline, if you want to try it, they have 10 more in the back. :)
